Hot Apple Cider Cookies

It's day two of the Christmas Countdown Cookie Advent Calendar for 2021. For those of us whose favorite holiday drink isn't eggnog or hot chocolate, then this cookie is for you. With just a touch of sweetness, spice and filled with apple flavor. This cookie will no doubt solidify apple cider as the holiday drink.



Makes: 10 cookies Best served: Fresh

Prep Time: 5 minutes Cook time: 20 minutes





Ingredients

2/3c almond flour

2/3c coconut flour

2/3c Turbinado sugar

1c apple cider, chilled


Instructions

Preheat the oven to 350 degrees Fahrenheit.

Line a baking tray with parchment paper, or lightly oil the tray

Sift the almond flour and coconut flour together in a bowl. You can use a fork to break up as many clumps as possible if you don't have a sifter.

Add the sugar and apple cider and mix.

The dough should be moist and crumbly

Roll the dough into balls then flatten. The dough doesn't fall in the oven, so make sure that you like the shape of the cookies when you put them in the oven.

Bake for 20 minutes. Place on a cookie tray and immediately sprinkle some sugar on top to decorate.
