Eggnog Sandwich Cookies

It's day fourteen of the Christmas Countdown Cookie Advent Calendar for 2021. We're adding another frozen treat to our countdown. As far as I know, everyone loves an ice cream sandwich. Soft cookies paired with creamy ice cream; what a treat.
Makes: 10 Sandwiches Dough must be chilled 30 minutes
Prep Time: ~45 minutes Cook time: 25 minutes

This cookie is perfect are an ice cream sandwich. It is soft, sturdy and pairs wonderfully with vanilla ice cream. A touch of ginger and a splash of nutmeg brings the eggnog flavor that this holiday season is known for.
With only six ingredients in this cookie, it is so easy to make. These cookies also last. The cookie also doesn't harden throughout the day, so make a batch in the morning and eat them at night. These cookies will stay soft.
Ingredients
1/2 cup coconut oil
1 cup sugar
1 1/4 coconut heavy whipping cream - mix the cream and liquid, chilled
1 cup coconut flour
1tsp ginger, ground
1tsp nutmeg, ground
Ice cream - I use the brand Coconut Bliss
Instructions
In a mixer, beat together the coconut oil, sugar, and coconut heavy whipping cream.
In a separate bowl mix the coconut flour, ginger, and nutmeg. Make sure that there a no clump of flour.
Gradually add the dry ingredients to the wet ingredients. Scrap the side of the bowl occasionally to ensure that there are no hidden clumps of flour.
Chill the dough for 30 minutes
Preheat the oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
Scoop the about -2 Tbsp of dough and roll it into a ball then flatten it.
Bake for 20 minutes
Assemble

Take one of the cookies and place a scoop of ice cream on it
Take another cookie and place it on top
